Skyr Breakfast Buns

Ingredients (for 9 pieces)

475 g wheat flour

230 g skyr

0,3 g fresh yeast

130 g water

10 g butter or oil

10 g salt

 

Instructions

1.     First knead all the ingredients into a firm dough by using a food processor.

2.     Cover the dough and let it rest for 20 to 30 hours. Stretch and fold the dough about every 8 hours. For this you have to pull the dough slightly apart in the bowl. Whip the dough towards the center like a letter. Turn the dough over and repeat. Repeat that a few times.

3.     After the resting time, divide the dough into 9 pieces. (about 94g per dough piece).

4.     Now form the buns from the dough pieces. Now form the buns from the dough pieces. To do this, press the dough flat and fold it back towards the middle until it is round and tight enough.

5.     Cover the finished dough pieces with a baker's couche or floured kitchen towel and let them rise for 1 hour.

6.     Meanwhile preheat the oven to 250°C top/bottom heat.

7.     Cut the dough pieces after the resting period with a razor blade or a very sharp knife.

8.     Now place the dough pieces on a baking tray (with baking paper) and bake them for 5 minutes at 250°C.

9.     After 5 minutes, reduce the temperature to 230°C top/bottom heat and bake the buns for 15 minutes. About 5 minutes before the end of the baking time, open the oven for a few minutes so that the steam can drain off and the buns become crispy.

10.  Take the buns out of the oven and let them cool down - and you're done!
