Today we are sharing a much-loved classic Christmas recipe - Knäck! This is a traditional Swedish toffee prepared at Christmas. The name translates into "break" and refers to its hard consistency. 

Katarina: "This is the world's simplest recipe for Swedish knäck . Just add the toppings as to what you desire! For a more traditional taste, add a little bit of chopped almonds to the mixture once ready boiled. Otherwise it's just letting the imagination run wild .... I did these ones with rock salt, chiliflakes, pistachios and rosemary. I would like to try it next time with pink pepper!"


SWEDISH CHRISTMAS KNÄCK


You will need:

  • 300 g whipped cream
  • 400 g golden syrup 
  • 100 g of sugar
  • 60 g butter

Steps:

Mix all the ingredients in a saucepan. Heat the mixture whilst stirring, let it boil on a medium heat until it reaches to 130 degrees. This will take about 25 minutes. Stir occasionally.

Pour the mixture on a plate of baking paper. Sprinkle immediately over the chosen toppings and let it cool before breaking into pieces.
