Recipe - Kladdkaka

 

One of the most loved 'fika' treats in Sweden is the Kladdkaka ('mud cake'), a sticky chocolate dessert. Most Swedes have their own recipe for the perfect kladdkaka. We love a gooey texture (through a shorter baking time) and lots of chocolate chunks!  See below for the not-so-secret recipe for Nordique's favourite fika treat. Super Yummy!

To make this delicious treat you will need:

·       100g butter

·       2 eggs

·       300g sugar

·       150g flour

·       4 tbs cocoa powder

·       2 tsp baking powder

·       1 tsp vanilla essence

·       1 pinch of salt

·       50g of 70% dark chocolate

Follow these steps:

Pre-heat the oven to 200 degrees. Spread a small amount of butter in a round baking tray so as to avoid sticking. Melt the remaining butter in a saucepan. Whisk the eggs and sugar together until fluffy, and gently add the melted butter. Mix all of your dry ingredients in a separate bowl then add this to the mixture.

Add your mixture to the baking tray. Break the dark chocolate into chunks and press these on top of the mixture. Place in the middle tray of the oven and bake for about 12 minutes. Leave to cool and then store in the fridge overnight to allow the cake to set. Sprinkle icing sugar on top and serve with whipped cream and fresh raspberries.
