'Dammsugare' treats - a healthy recipe!

 

Earlier this week we spoke to the fabulous Marja Folcke, owner of Bake Sugar Free (Baka Sockerfritt). Marja has very kindly shared one of her healthy, sugar-free recipes for a classic Swedish 'fika' treat - dammsugare! 

“I think it's so much fun to bake classic pastry /patisserie pieces and turn them into healthy treats. Funnily enough, I think (and others have agreed on this) that they can often actually taste a good deal better than the original. Take these examples of ‘Dammsugare’ which is a classic Swedish patisserie treat. They contain no added sugar or gluten (of course)!”

This beloved treat goes by several different names, but the most commonly used is Dammsugare (which literally means vacuum cleaner…!)

Dammsugare - 10 pieces

Chocolate dough:

  • 50g unsalted butter
  • 100g almond flour
  • 35g desiccated coconut
  • 3 tablespoons stevia
  • 1½-2 tablespoons cocoa
  • Half a teaspoon arrack liqueur 
  • 1-2 tsp vanilla powder/essence 

Marzipan:

  • 50 grams of butter
  • 150g almond flour
  • 3 tablespoons stevia 
  • 1 tablespoon psyllium husk

Decoration:

  • 70 grams of chocolate without added sugar

The chocolate dough

Mix all ingredients for the dough and form ten small lengths out of it. Let it rest in a refrigerator while the marzipan is made.

Marzipan:

Mix the ingredients for the marzipan, leave to cool for a few minutes in the fridge. Then place the dough between two pieces of baking paper and roll out to a rectangle. Remove the top paper. Carefully cover the 10 small chocolate rolls with your sheet of marzipan. It can help to use the baking paper with your marzipan laid out on rather then removing the sheet of marzipan with your hands to avoid breakage and cracks. 

Decoration:

Melt the chocolate and dip / pour the chocolate on the edges of your finished creations. Leave to set.
